

Dad’s Potato Salad
This is a pretty straightforward recipe for potato salad but it’s my fave. This is the recipe in Dad’s own words, taken from the email he sent me when I asked for it:
This recipe is mostly about the ingredients. The exact proportions are to be determined by you. I make things like this to taste, not by measurement.
4 (or so) large, Idaho Russet potatoes, peeled cubed and boiled until fork tender
1 white onion, chopped fine (heat it whole in the microwave for 30 seconds before cutting)
Celery, chopped
Claussen’s Chill Dill pickles (accept no substitutes) chopped, and put some of the pickle juice into the salad (one of the last steps) to make the salad the right consistency.
One or two fresh cucumbers, peeled seeded and cubed
Fresh Parsely, chopped fine
Celery seed
A little dill weed
Lawry’s Seasoned Salt
Miracle whip
One small container sour cream
NO EGGS, NO SUGAR, NO TOMATOES, NO PEPPERS, NONE OF THAT SHIT
