
Broccoli and Mushroom Strada
Ingredients:
6 slices of white bread, cubed
1 1/2 cups crumbled brocolli or baby brocolli heads
10 whole white mushrooms, stems removed
12 oz shredded sharp cheddar
8 large eggs
2 cups whole milk
1 tbsp dijon mustard
1 tsp kosher salt
Beat together the eggs and the half and half, then stir in the mustard, parsley, salt and a little black pepper. Coat a large baking dish with butter or cooking spray and arrange the bread cubes at the bottom. Cover the bread cubes with alternating layers of brocolli and cheese until it’s all gone. Pour the egg mixture over everything. Strategically place your mushrooms, then cover with saran wrap and refrigerate overnight.
The next morning, take it out of the fridge and let sit for 30 mins. Preheat your oven to 300 degrees and bake uncovered for 1 1/2 hours.
