
Grilled Cheese
Ingredients:
Round loaf of sourdough bread, sliced (This pic uses the Rosemary Sourdough they sell at Whole foods)
Yellow Sharp Cheddar, shredded
Monterrey Jack Cheese, shredded
Red Onion, slice thin in rings
Alfalfa Sprouts
Medium sized Tomato, sliced
Oregano
Unsalted Butter
Dipping sauce (Optional):
Ketchup
Tabasco
Heat a non-stick grill pan over medium heat. Using soft butter and a bread knife, butter the outside of two pieces of bread. Place one piece of bread butter side down in the pan and add a layer of sharp cheddar. Add the tomato slices, alfalfa sprouts, oregano leaves and red onion rings sparingly, intermingling small potions of both cheeses. Place the other piece of bread on top butter side up. Throw a couple more of the red onion slices (halved) on top of the sandwich and press down with a spatula.
Peak at the bottom of the sandwich for browning if you’re inexperienced. Otherwise, wait until you know it’s right and flip it then. You know golden brown and delicious when you see it.
